The Principle Behind Sinolea®

 

Sinolea® works on a precise physical principle: olive oil has a greater affinity for stainless steel than vegetation water. During the extraction cycle, specially designed stainless steel elements enter the malaxed olive paste and collect a thin film of oil on their surface. As they rise, the oil separates naturally and is conveyed to collection channels.

This is what makes Sinolea fundamentally different from conventional extraction based on centrifugal force. The process is not built around pressure, dilution water, or aggressive mechanical separation. It is built around controlled, low-impact extraction.

How the Sinolea® Process Works

 

After crushing and malaxation, the paste enters the Sinolea® extraction stage. Here, a series of stainless steel blades, traditionally referred to as pettini, move cyclically through the paste. A thin layer of oil adheres to the steel surface, then separates by gravity as the blades rise.

In practical terms, the process is designed to reduce stress on the product during one of the most delicate stages of extraction. That matters to producers who are working to preserve aromatic profile, phenolic structure, and sensory definition.
