Sinolea® functions on a simple yet powerful physical principle: olive oil adheres to stainless steel more readily than water does. This selective adhesion allows for continuous extraction without mechanical stress.

Thousands of stainless steel blades (“pettini”) are immersed cyclically into the malaxed olive paste.

A thin film of pure oil adheres to the steel surfaces.

As the blades rise, gravity causes the oil to drip naturally into collection channels.
